This was today's lunch. I put it on one of those 100 calorie Sandwich Thins from Arnold. I also omitted the blue cheese as I didn't have any. This was really good.
Buffalo Chicken Sandwich
1/4 cup cooked chicken, shredded
1 tbsp hot sauce
1/2 tbsp mayonnaise

1 tbsp shredded carrot
1 tbsp sliced celery
1 tbsp green onion, sliced
1 tbsp blue cheese, room temperature, crumbled*
1/4 cup cheddar cheese, shredded (I used low fat cheddar)
1 tbsp butter
Mix the chicken, hot sauce, mayo, carrot, celery and onion in a small bowl. Spread butter on the outside of the bread, assemble sandwich and grill until golden brown and the cheese is melted, about 2-3 minutes per side.
Risa's notes:
*original calls for blue cheese but i didn't have any.
Yield: 1 sandwich
