I don't remember if I posted this recipe last year or not. When we took Trevor to the Allergist last Winter, she suggested that I go as vegan as possible (if not completely) - that dairy was bad for his cough-variant asthma (CVA) and I should try and take out as much dairy as possible from his diet. I went online and found this recipe which I have adapted a bit to fit our needs and our cupboards. These are quite moist and very good.
Makes between 12-18 depending on size of muffin cups
1-3/4 cups all purpose flour
2 tbsp baking powder
1/2 tsp baking soda
3/4 cup Stevia
1 cup vegan semi-sweet chocolate chips
1 cup soymilk
1/3 cup vegetable oil
1/4 cup pure apple sauce, unsweetened
Set over to 400 degrees F.
Spray muffin cups with cooking spray. In a bowl, combine dry ingredients and chocolate chips. In another bowl, combine wet ingredients, whisk and then pour into dry ingredients, whisk to combine. Do Not Overmix.
With ice cream scoop, scoop mixture into muffin cups. Bake 20 minutes. Remove and cool on wire rack.
