I have been making this recipe FOREVER, it is so easy to make and the whole family loves it so we make it every other month or so probably. I mentioned in a comment the other day, on someones post about dinner, that I had made prezel bites stuffed with pepperoni and mozzerella cheese for dinner, and some cheesy hotdog prezels too. I had some requests for me to share the recipe so here it goes:
Ingredients:
1 1/2 c warm water
1/2 packet of active dry yeast
2 TBSP brown sugar
1 tsp and a pinch more of salt
4 cups flour

2 cups warm water
2 TBSP baking soda

butter and sea salt
sprinkle yeast onto 1 1/2 c water and stir to disolve. Add sugar and salt and stir. When dissolved add in flour. Knead together until smooth and let rise for at least 30minutes
when you are ready to use the dough mix the other 2 cups of water with the baking soda. Set aside. start breaking off pieces of your prezel dough and form into sticks or shape it however you want it really. I like to make sticks with some of it and then I use the rest of it to wrap around hot dogs and cheese. soooo good!!!
After you form your pretzel stir your water mix again to make sure it is mixed good and then dip your pretzels in the mix and put on greased baking sheet.
Let rise again for another 10 -20 minutes and then bake at 450 for about 10 minutes :)
Now when I made it last week I made some pretzel balls that I stuffed with a small bit of mozz and a slice of pepperoni, then we dipped those in pizza sauce. I simply pulled off a small piece flattened it out in my hand, put a piece of pepperoni and mozz in and wrapped it up around then rolled in my hand to form a ball. Make sure that there are not any wholes in it for the cheese to leak out. WIth the prezel dogs same concept, I always cut the hotdogs and cheese slices in half before wrapping in the dough.
If you are going to mak pepperoni bites, or prezel hot dogs instead of just plain ole pretzels you will need to lower the temp of your oven to about 325- 350 and cook it slower, so for about twice as long as just the prezels would cook. This will ensure that the inside of your pretzels do not come out doughy and that the hot dogs and cheese and stuff get nice and hot inside. You want to just watch it and when it starts to get a nice light brown color they are done.
You can brush with melted butter and sprinkle with sea salt. I like to make a cheese sauce for mine too to dip my prezels in. They never last past the next day in my house!
Here is a pic of my pepperoni pretzel bites, I didn't take one of the hotdogs or just pretzel sticks this time, although I know if I were to go through my many photos I have some somewhere of just those. I might add them to the post later...

I've tried the twisty ones in the past too. Nothing doing!
