This ham soup also includes yellow split peas, garbanzo beans, navy beans and barley. It is the first time I've made such a dish and it was delicious! SO warming on these freezing cold winter days.
- oil or butter
- 2 cups diced smoked ham
- 1 cup diced carrot
- 1 cup chopped celery
- 1 cup chopped onion
- a mixture of: yellow split peas, garbanzo beans, navy beans and barley (or your favorites)
- garlic powder and salt and pepper to taste
- water to cover
- In a large soup pot, heat oil or butter over medium heat. Add ham, carrot, celery and onion and cook for about 10 minutes, or til veggies soften. Stir in remaining ingredients and bring to a boil over high heat.
- Reduce heat to low and cook soup about 2 1/2 hours, adding more water as needed.
