This dessert sort of has the consistency of lava cake. It is best served in a bowl and eaten with a spoon. If you don't care about the calories, serve it with a little whipped cream. Or, make it even more healthy by using organic ingredients. Super yummy!
In a pan bring 1 1/2 cups water to a boil. Add 1/2 cup quinoa. Reduce heat, cover and simmer for 20 minutes. Remove quinoa from heat, uncover and let stand until room temperature (or place in the frig until room temperature if you are in a hurry).
Preheat oven to 350 degrees
In a food processor or Vitamix blender place the following:
Cooled quinoa
1/2 cup honey (the raw, thick kind is the best)
1/2 cup cocoa powder
1 tsp baking powder
Scant 1/4 cup milk
2 tablespoons applesauce
2 eggs
1 tsp vanilla (or other extract of your choice)
Process until smooth (I did about 2 minutes in my Vitamix, but each machine is different)
Pour into an 8X8 greased pan (I use Demarle pans, so no greasing is necessary)
Bake for 35-45 minutes until inserted toothpick comes out clean. Do not overcook or your dessert will be tough and spongy instead of moist and gooey.
Let cool or enjoy warm.
