What are you cooking tonight for dinner? I am making my favorite: roast beef, roast potatoes, and veggies. I am actually excited about the vegatables. My husband is diabetic, so I make a lot of vegetables.
Today, I sliced up zuchhini, carrots, yellow squash and eggplant. I put a couple of tablespons of light olive oil in a ziplock bag and coated the vegetables. Then, I place a layer of vegetables in a roasting pan and spice. I also add a tablespoon of sesame seeds to the top to add a bit of crunch.
