"Two hours after eating a single junk-food meal high in saturated fat, a group of healthy non-smoking men experienced a 24-percent lower dilation of their arteries compared to when they were fasting, researchers from the Montreal Heart Institute say. That wasn’t after eating some kind of Double Bacon Deathburger either — just a sausage, egg, and cheese sandwich with three hash browns.
Poor arterial dilation is a “significant precursor†to atherosclerosis, or hardening of the arteries, notes study author Anil Nigam, M.D.

A healthy Mediterranean-style diet (lots of vegetables and OLIVE OIL!!!), however, appears to have the opposite effect, helping the arteries dilate and expand normally and encouraging good blood flow, the study shows."
