I can't remember where I found this recipe, but it was sure delicious! Vary the heat by adjusting the amount of habaneros you add.
3 lbs. beef stew meat
1 T fresh lemon juice
1/2 t salt
2 T vegetable or canola oil
1/2 onion, chopped
1 large can diced tomatoes
1 habanero (or to taste. I use 4 when I make it just for me)
hot cooked white rice
In a large bowl, toss beef cubes with lemon and salt. Let rest 1/2 hour. Discard juice.
Heat oil on medium high heat til very hot. Toss in beef and brown. Add onion, saute 5 minutes. Mix in the rest and simmer for 1 1/2 hours or til beef is very tender.
Serve over rice.
