Bok Choy grown in an Aquaponic system

A friend shared a recipe in one of our on-line cooking groups a few days ago for a slaw made with Bok Choy instead of cabbage. Â Since I had some in my refrigerator I decided to play with the recipe. Â The recipe as given came from Cooking.com...but as usual, I tweaked it to suit us and the ingredients I had on hand.
The dressing in the original recipe called for sesame oil, but I was out and did not use any oil, but instead added the juice of several tiny calamandine oranges. It was very crunchy and refreshingly delicious!
Crunchy Bok Choy Slaw
For the dressing:

Whisk all the dressing ingredients together and let sit for a bit so sugar can dissolve. Whisk again before adding to the slaw. Â Mix, cover, refrigerate until ready to serve.

There's a "real" store another couple of miles down the road, but making that walk while carrying a bunch of goodies is a bit too much for me on a regular basis.

Braised Baby Bok Choy with Honey-Orange Glaze
I made another one a few days ago and this time added a chopped Granny Smith apple...for dressing I used honey, red wine vinegar and Greek yogurt mixed together...It was delicious!
