Have you ever tried breakfast for dinner. This evening got a little cool and the clouds moved in with a slow drizzle of rain. Looked like it was set in for the night. I wanted comfort food for dinner. Hence...what else? An Omelette!

This is what I did...
4 Jumbo eggs
Salt & Pepper to taste
Chives
One medium Red Potato
Thin sliced Ham Strips
Butter
Mix well your eggs with salt and pepper to taste and 2 tblsps of milk. Set to the side.
Cut your ham (your preference) into thin strips. Enough for two people. Place in a small skillet on medium heat and cook for 3 to 5 minutes. Remove and place in a side dish.
Cut your potato into small squares and place in the same skillet adding salt and pepper to taste. Cover and cook for 5 to 8 minutes. Remove and add to the ham dish to the side.
Pour off any extra fat/grease. Place one tbsp butter into pan. Add eggs and place potatoes and ham in the pan over your eggs. Place in the oven heated at 350 degrees and bake for 8 to 10 minutes.
When you remove your cooked omelette sprinkle with a little paprika and chives while it is steaming hot!
Serves two hearty helpings.
You can substitute bacon for ham and you can of course add things that you prefer to have in your omelette.
Try it. It was DElicious for Dinner tonight!

I don't eat breakfast often but I love breakfast foods...so dinner time is a good time to eat them
You eat your eggs for breakfast alone, you share them with your friend for lunch, and you let your friend eat them for dinner...
I cannot believe I have never added potatoes, a great idea.
