Sicilian Brasciole a la Lena

Yield: 4 servings
1 tb Olive oil
1 ea Onion chopped
4 ea Garlic cloves chopped
1/8 c Fresh parsley chopped
1 c Bread crumbs
1/8 c Romano cheese grated
1/8 c Raisins
1/8 c Pine nuts toasted
1/2 ts Black pepper ground
1 tb Olive oil
1 1/2 lb Round steak
1 tb Olive oil
1 ea 32 oz jar spaghetti sauce*
*NOTE: If you wish to make your own do so.
Heat 1 tb olive oil a heavy skillet over med-heat.
Saute onion until translucent, 10 mins.
Stir in garlic & parsley.
Continue cooking until onions begin to brown.
Remove from heat then allow to cool.
Combine bread crumbs, Romano cheese, raisins, pine nuts & pepper in a bowl.
Pound steak to 1/2" with a moistened mallet.
Spread onion mixture evenly over meat while leaving a 1" border around edges.
Spread bread crumb mixture in an even layer.
Drizzle with 1 tb olive oil.
Roll up from narrow end then tie tightly with kitchen twine.
Heat remaining olive oil in Dutch oven over med-high heat.
Brown roll on all sides 1-2 mins. per side.
Pour in spaghetti sauce.
Cover then reduce heat to low.
Cook for 2 hrs. until tender.
Serve hot.
