Carne De Cerdo - Pork & Lentils & Bananas

Yield: 6 servings
1 tb Olive oil
2 1/4 lb Boneless pork cubed
2 ea Onions chopped
2 ea Garlic coves minced
3 ea Tomatoes diced
3 oz Boiling water
Salt & pepper to taste
1 1/2 c Brown lentils
4 c Water
4 ea Firm bananas
3 tb Fresh cilantro Chopped
Heat olive oil then brown pork on all sides.
Add onions & garlic then brown them.
Add tomatoes, diced, boiling water, salt & pepper to taste.
Cover then cook very slowly for about 1 1/2 hour.
Simmer lentils in water for 45 mins. but do not drain.
Add undrained lentils to pork mixture.
Stir to mix well.
Cover then cook over a low=heat for 30 mins. until pork & lentils are tender.
Adjust seasoning then add bananas cut into 1" chinks then chopped coatrsely.
Add fresh cilantro then cook for 10 mins. longer.
Serve with a little more cilantro sprinkled over top.
