Pule Me Arra - Chicken & Walnuts

Yield: 4 Servings
1 ea Chicken whole
6 c Water
1 c Walnuts shelled
Salt & pepper to taste
1/4 c Butter
2 tb Flour
3 ea Cloves garlic crushed
2 tb Vinegar
Simmer chicken in water until tender,
Remove chicken from water.
Reserve 1 cup of stock.
Cool chicken slightly.
Cut to 4 portions.
Melt 2 tb butter in large cast iron skillet.
Add chicken pieces & saute until browned.
Remove chicken pieces & keep warm.
Add remaining butter & flour.
Cook while stirring until browned.
Add reserved stock, stirring to avoid lumps.
Bring to a boil then add walnuts, vinegar, garlic, salt & pepper to
taste.
Simmer over low heat until heated.
Spoon sauce over chicken pieces.
