Tomorrow is a busy day for me, and a long one as I will merchandise three stores, then demo from 3-8, giving away chips. I will take the laptop along so I can enter my data as my projects get completed.
I wanted to eat out tonight, felt lazy, but I talked myself out of it. There is almost never a real need for us to eat out, and we have eliminated it almost completely. I know that we are going out tomorrow for lunch as we will be out of town. We will go to our favorite Hong Kong Buffet. To make up in advance, I thought we should eat really healthy, and cheaply tonight.
We roasted a turkey on Monday, which means lots of turkey all week, so that is a good buy. Hubby boils the bones and added vegetables and makes a marvelous broth to cook with, so that is what I started my meal plan with.
I took a couple of cups of broth, and brought it to a boil. Into the simmering broth I tossed a large diced potato. I sliced in a carrot, added a quarter of an onion, chopped, two large cloves of garlic and a crown of broccoli. When the veggies were tender I added chopped turkey, about two cups. Salted it lightly, and some black pepper.
I resisted the urge to pour a can of mushroom soup over it, or sprinkle it with cheese. I do both of those things a lot, and they really just mask the veggies and add calories and fat to the meal.
I sprinkled a little soy sauce on mine, and had a few Rosemary and olive oil Triscuits on the side. I am going to be adding more Rosemary to my cooking.

U R more frugal then I am. I am getting better at using stuff up.
It's good that you resisted the urge to add in the canned soup and cheese. Not keeping canned soups on hand will help you even more.
When it comes to cheese, only buy the good stuff. That means, nothing by Kraft or any of its kin. There are two good reasons to invest in the good stuff: 1) it is better for you. 2) you are likely to use less of it, both due to the price and due to the fact that it has better flavor than the non-quality stuff.
And way to go on eating out less and not adding "cover ups" to your dinners.
