I am posting this rather late. I was very busy today. Tonight we had Pork Chops with Glazed Apples & Onions, long grain wild rice, corn on the cob and green beans. It turned out really good. The recipe for the Pork Chops is from my "Meals Made Easy with Grey Poupon Mustard".
4 pork chops about 3/4 in. thick
2 tsp. vegetable oil
1 medium onion, thinly sliced
1 large apple, sliced
1/2 cup Grey Poupon Honey Mustard
1/4 cup apple juice
In large skillet, brown pork chops in 2 tsp. oil over medium-high heat. Brown on both sides and then cook 5 to 10 minutes or until chops are done. Remove to serving platter and keep warm.
In same skillet, over medium heat cook the onions in the pan drippings for 3 to 5 minutes, stirring occasionally. Stir in apple, cook for 5 minutes or until the onions and apple are tender.
Stir in mustard and apple juice, heat through.
At this point I put the pork chops back into the pan and let them soak up some of the juices for a bit and heat back through.
Serve with your choice of sides.
This is a great Fall meal because the apples in the fall are very fresh. I used 2 apples instead of one this evening. I had Red & Yellow Delicious apples on hand and used them. When apples go on sale in the fall this meal is so delicious with an apple such as the HoneyCrisp, Wine Sap or even the Pink Lady. I also like to pair this dish with Baked Sweet Potatoes in the fall and nice green butter beans. Serve some apple pie and you have a wonderful meal.
