Hadra Chorba - Turkish Chicken & Noodles Stew

Yield: 6 servings
2 tb Olive oil
1 ea Onion chopped
3 ea Garlic cloves minced
12 ea Saffron threads crumbled
3 tb Fresh cilantro Chopped
3 tb Fresh parsley Chopped
2 tb Sweet Hungarian paprika
1 tb Hot Hungarian paprika
1 ts Coriander ground
2 ts Caraway seed ground
8 c Water
1 ea Butternut squash peeled & cubed 1"
3 ea Carrots peeled & grated
1 ea Turnip peeled & cubed 1/2"
1 ea Potato peeled & cubed 1/2"
2 ea Celery ribs & leaves chopped
1 1/2 c Tomatoes canned & crushed
1 ea 15-oz can chickpeas drained & rinsed
1/3 c Couscous
4 c Chicken cooked & cubed 1/2"
Olive oil as required
Heat oil in heavy soup pot over med-heat.
Add onion, garlic & saffron threads.
Cover then cook until onion is translucent while stirring often.
Add 2 tb cilantro, parsley along with 4 ingredients.
Cover then cook for 5 mins.
Add water then next 6 ingredients.
Bring to boil then reduce heat.
Simmer until squash is tender.
Add chickpeas & chicken.
Cook pasta until tender but al dente.
Drain pasta then add pasta to soup.
Season soup to taste with salt & pepper.
Ladle soup into bowls.
Sprinkle with remaining parsley & cilantro.
Drizzle olive oil over each then serve.
