My friend Portia Little adapted this from a conversation with our friend Joan. Joan said that she makes cornbread using mayonnaise instead of eggs and oil (mayo is made with eggs and oil) and she didn't really give Portia a real recipe so Portia played around with it and this is what she came up with. She posted it on her blog at examiner.com and also on Facebook. I served it with the chili Sunday night. It was extremely simple and really tasty.
Portia’s Easy Cornbread
1 cup cornmeal (yellow or white)
1/2 cup all purpose flour
1 tsp baking powder
1/4 cup mayonnaise
3/4 cup buttermilk
1 tbsp sugar (I used Stevia)
Preheat oven to 425 degrees F. Prepare pan (or muffin tin)by spraying with nonstick spray.
Place pans in oven to heat up while you prepare the batter.
Combine corn meal, flour and baking powder. Add mayonnaise, buttermilk, sugar and salt. Whisk together until well-combined. Do not over-mix though. Pour the batter into prepared pan(s). Bake about 20 minutes, or until bread tests done.
Yield: 1 loaf OR 1 tray of muffins
