I got the original of this from one of my friends on Facebook and she got it from a Susie Fishbein book. This was so easy to make and a perfect side dish.
Cherry Tomato Crisp
6 tbsp olive oil, divided
2 pints cherry tomatoes, stemmed
1/2 cup whole wheat matzo meal*
2 tbsp fresh parsley, chopped
1 tbsp dried minced onion (I used 1 tbsp Penzey’s Mural of Flavor)
2 cloves garlic, minced
1/2 tsp sea salt
1/2 tsp black pepper
Preheat oven to 425 degrees F. Lightly coat a shallow baking dish (I used an 8x8 brownie pan) with 2 tbsp olive oil. Add the tomatoes and toss to coat. Arrange in a single layer.
In a medium bowl, combine the matzo meal, parsley, onion, garlic, salt, pepper and remaining olive oil. Mix well and sprinkle over the tomatoes.
Cook for 20-25 minutes until crumbs are golden brown and tomatoes are tender. Serve hot.
*original recipe calls for plain white matzo meal.
Yield: 4 servings
