Sour Mash Whiskey Sauce

Yield: 1 batrch
1/2 tb Garlic chopped
1/2 tb Shallots chopped
4 oz Button mushrooms sliced
1/3 c Sour mash whiskey
1/4 c Chicken stock
1/2 tb Crystalized ginger
3 tb Unsalted butter
Salt & pepper to taste
Pre-heat a saute pan then add 1 tb butter..
Saute until onion is transluscent.
Add mushrooms & ginger.
Add salt & pepper to taste.
Cook until mushrooms are soft.
Deglaze with sour mash whiskay then use a wooden spoon scrape bottom of pan.
Add chicken stock then simmer & reduce liquid by 1/2.
Finish with 2 tb butter while whisking in until creamy.
