NYC Irish Corned Beef & Cabbage

Yield: 8 servings
4 ea carrots sliced 1/4" thick
18 ea New red potatoes 1/4'd
1 ea Onion chopped
4 c water
1 c Guinness Stout
1 ea 4 lb corned beef brisket
1/2 ea Cabbage head coarsely chopped
Place carrots, potatoes & onion into a slow cooker.
Pour in water.
Put brisket on top of vegetables.
Pour stour over brisket.
Sprinkle well with spice packet.
Cover then set cooker on High-heat.
Cook brisket for 7-8 hrs.
One hour before serving you will need to stir in cabbage.
Following this you will cook for 1 more hr.
