Herring Salad a la German Peter
5 pounds of salad potatoes
10 cans of Herring Filet in oil [2 filets per can ]
4 cans Red Beet [Germany has 4 pieces in 1 can.]
5-6 big Apples mix sour and sweet
2 large Celeriac
1 pound of cooked Meat Sausage
4 pounds of Beef or Pork [without fat]
6-8 whole Pickles
4 middle sized Onions
1 large can Green Peas
1 can whole Corn
4 ounces of cooked Carrots
If you desire add the little beads of Green Peppers in a jar.
To get a special taste for the salad, you need mayonnaise’
When you have all these things around you, you can start to prepare.
Recipe for twenty
Potatoes cooked and peeled. Cool then cut in small cubes
Celiac peel and cut in cubes place in quart jar and cook a shorter time
The meat has to be cooked and cut in small cubes
The Herring remove from the oil and cut in strips about 1/5 inch. About finger size
Red Beetroot has to be cut into cubes
Apples have to be pared and cut into cubes
Meat Sausage , Pickles and Onions cut into cubes
Carrots, green peppers, green peas, and corn drain juice from them.
Use large mixing bowl mix all with salt and cider vinegar. Allow to sit.
Add mayonnaise just before eating. Serve with Baguettes of bread or white long French bread.
