I came up with this recipe by combining a few that I found here and there. These were awesome!
Feel free to add the spices to your taste. I didn't actually measure any of them.
If mixture appears dry, add a little beef broth to the simmering meat.
1 lb ground beef
1 small onion, chopped
1 small can diced tomatoes
salt and pepper to taste
1 t paprika
1/2 t cumin
1/2 t dried mint

pinch thyme
In a large frying pan, brown meat and onion. Drain well.
Stir in tomatoes and spices. Simmer about 20 minutes. Taste and adjust spices as desired.
I served the tacos on a fresh pita with yogurt and garlic.

This would be another good place to use some of your excess carrots. Topping this with a little shredded carrot would add a bit more color and boost the nutritional value a bit.

Did I tell you I now have access again to fresh bakery bread? Our local grocery store opened back up.
I was just there yesterday perusing the varieties of bread. Wanted cheese bread but it was all sold out.
Tam had a grilled chicken breast with a wild rice mix and steamed vegges. I had the same...minus the chicken,
