Swiss Cheese & Vegetable Soup

Yield: 4 servings
8 oz Swiss cheese shredded
2 ea Carrots chopped
1 e Potatoes pelled & cubed 1/2"
2 c White beans dry
2 c Stewed tomatoes
1/3 c Onion chopped
3 c Water
1 c Half-&-Half
2 tb Unsalted butter
Bring water to a boil in a large soup pot.
Add beans & butter.
Cover, reduce heat then simmer for 2 hrs.
Add onions. tomatoes, cheese potatoes & Half-&-Half.
Cook for 30 mins. while stirring several times.
Serve hot with bread or biscuits.
