If you have a good recipe (and I do, I got it off youtube) you can make your own "wheat meat" (it's the same stuff mock duck is made out of). It's basically a very rubbery wheat gluten, mixed with garbonzo bean flour (and then it's not so rubbery anymore, ha ha) and then lots of flavor stuff mixed in.
I made it into a sheet, rolled it up around my bread stuffing, and made a stuffed "log". I steamed that while it was tightly twisted up in aluminum foil. Then it sat in the fridge a day.
The foil is now removed and it's in the crock pot now with lots of vegetables, and at the end of the day it will all be fantastic!
(people tell me fake stuff like that is gross but I think a dead bird is gross, ha ha ha)
