Good morning all! Whew, its been a crazy week, so I haven't really been around much this week. I got called yesterday morning to come in and sub and right afterwards ran back home and had an hour before I was out the door to head to my part-time job. Whew! I ended up not going to sleep until past 1am because students in a building over decided to have a party.
I'm leading a Bible Study group this year and on Monday I'm hosting a dinner for my group. It's a group of 7-8 people so I've been spending the last few days thinking of what to make. I have decided to make my grandmothers Shrimp Casserole (without shrimp). It's incredibly good and I've modified it to be even healthier. I'm doing a salad on the side since its a little spicy and a salad compliments it perfectly. I'll probably also do potaotes on the side or another veggie.
Now what I'm trying to decide on is dessert. I have a few ideas in mind and was hoping to get feedback on what you would make. Here's what I'm debating on;
Apple Cake
Harvest Carrot Cake
Something Pumpkin esque

I do want to do something more fall centered for dessert-so I'm also taking suggestions :)

-1.5 cups of rice
-1 stick of butter
-1 can rotel tomatoes
-1 can cream of onion
-1 can cream of chicken
-1 white onion
-1 bell pepper
shrimp (one bag)-optional.
Preheat oven to 350 melt butter and mix all ingredients and put in a large casserole dish. Bake for 1 hour.
I'll take the curry rice and Thai curry to start ;)
I love carrot cake or anything pumpkin.
