Gatwick Cheddar Chowder

Yield: 6 servings
2 c Water
2 c Potatoes diced
1 c Carrots diced
1/2 c Celery diced
1/4 c Onion chopped
Salt & pepper to taste
White Sauce:
1/4 c Butter
1/4 c Flour
1 c Half-&-Half
1 c Extra-sharp Cheddar cheese grated
1 c Cheddar cheese grated
1 c Ham cubed 1/2"
Combine all these ingredients in a large pot.
Boil for 10 mins.
White Sauce:
While vegetables are cooking then melt butter in a small saucepan.
Add flour then stir until smooth.
Slowly add Half-&-Half.
Cook until thickened.
Add cheese to sauce then stir until melted.
Add white sauce & ham to undrained vegetables.
Heat through then serve.
