A Hundred Muffins

I was up a bit late last night making muffins.  Today was the first day of classes, so several of us at church baked muffins and 8 or so of us went onto campus to hand out muffins to students.  I went with two friends and we had given out over 100 by the time 9:50 classes started.  Crazy in a way since we were just standing on crosswalks!

 

I made four types of muffins-blueberry banana oat, chocolate peanut butter fudge, double chocolate brownie and cherry orange (wow, better than I thought).  I actually created the last two myself by modifying a base recipe.  They all turned out great minus over stirring the brownie muffins.  They were all also vegan and the blueberry banana and Chooclate PB were gluten free ;)

 

After I came back, I got to work on my to-do list and made a few phone calls.  I've gotten a decent chunk of stuff done and later I'm heading out to look about getting a new laptop.  It'd hard to believe I've had this one for over 3 years, but I sense its trying to die from the once a day blue screens of death.

It was. We had such a great response. It's amazing to give a pick-me up that seems so small, but makes such an impact.

That is a nice thing to do.
My favorite type of muffin is coffee cake like the one at Dunkin Donuts. I also like chocolate chip. I've never had cherry orange--I think I would like that flavor :)

I've never had a coffee cake muffin, though I love anything with coffee. The cherry muffins were spur of the moment since I was out of blackberries.

I like the oatmeal muffin recipe shared here on Gather. It can have any kind of dried fruit, and yogurt in it. I think your little project was fantastic.

My all time favorite is the blueberry muffin. I also do like cranberry and orange muffins as well, especially during the fall season :)

Both are really good. I'm really excited to start seeing fresh cranberries in the next few months for fall and winter =)

I love blueberry but also like banana. I'm pretty sure I would LOVE any of the chocolate ones, too! That was a very sweet thing to do for students, Rebecca.

Elliott and I made muffins yesterday. He's been taking one in his lunchbox every day. We made both zucchini and banana nut muffins. The banana nut recipe was a different one than the one I usually use, and we didn't like it as well. It was ok, just not great.

Some recipes don't turn out so well. I had a zucchini pancake recipe the other night that didn't work out as well as I had hoped.

That chocolate peanut butter fudge sounds very good. I like blueberry usually and I also love the Buttermilk spice muffin from MiMi's cafe.

My favourite type of muffin has to be the free one - yummy - actually vanilla is probably my favourite as I have not tasted any others for a very long time :-)
