As most of you know buy now I am diabetic. I also have friends and relatives who are diabetic and they have been telling me that I have to try this Dreamfields pasta. They told me it had no affect on their blood sugar at all like most pasta does.
Dreamfields pasta has 41 grams of carbs which for me would be a huge red light, however according the package they have unique process that creates a matrix within the pasta that keeps 31 grams of the carbs from being digested by the body. So in essence you are only digesting 10 grams of carbs, which is OK. I was told to never eat more than 24 carbs at one sitting. They say it has a 65% lower glycemic index than regular pasta. It also has over twice the fiber of normal pasta.
My friends and family also assured me that I would not be able to tell the difference with the taste and texture of this product from regular pasta. I have had at least 5 people tell me this. So I had to find out for myself.
Tonight I ate some Dreamfields Spaghetti. I normally eat no more than 1/8 of a cup of pasta during anyone meal. Tonight I had about a cup and a half, I had ground beef mixed in with tomato sauce too. I drank Crystal Light, and about 4 oz of skim milk.
Keep in mind also that I am not an insulin dependent diabetic, my blood sugars are under control, I take 1 pill and that is all so my diabetes is not that bad. 2 of the people who told me about this pasta are insulin dependent however, and they said this pasta did not affect their blood sugar at all.
Before I ate dinner I tested my blood sugar it was at 109. I took my blood sugar exactly 1 hour after eating dinner. my blood sugar was at 167. In all fairness my doctor says not to judge yourself an hour after you eat because your body is busy digesting food so it is naturally going to be a bit higher, that is why they tell you to test 2 hours after you eat. So initially it did raise my blood sugar.
I am going to wait another hour or actually about 40 minutes now and then I will take my blood sugar again and I will add my results to this posting. I want to be fair. I am afraid if I don't post this though that it will go away so come back in a little while to see the end results.
I can tell you now that it did taste just like normal pasta. I tasted no difference and neither did anyone else in my family. I was told however, that unlike regular pasta this pasta does not keep or re-heat well, so if you make this don't make more than you can eat at the meal you are serving it at. I will take their word for it, as we don't have any left, and all 5 people said the same thing.
The Two Hour Result
I am sorry to say that after 2 hours my blood sugar went up by 20 points. So the Dreamfields pasta did affect my blood sugar, and did raise it. Perhaps I ate too much of it, but we had 6 people eating and the package contains six servings so I ate about a serving, it could have been the pasta sauce I used as well. Although I it only had 10 grams of carbs. I have also been sedentary since I ate it as I have been sitting here at my computer. Unfortunately it did cause my blood sugar to increase quite a bit. So while the other 5 people said it did not affect them it did affect me.
That is my conclusion. Sorry to say, I was looking forward to eating spaghetti for dinner again.
