Shopska Salata - Bulgarian Tomato Salad

Yield: 6 servings
4 ea Tomatoes chopped
1 ea Cucumber peeled & chopped
4 ea Green sweet peppers roasted & chopped
1 ea Yellow onion chopped
2 tb Fresh parsley chopped
1/2 c Sunflower oil
1/3 c Red-wine vinegar
Salt & black pepper
1/2 c Bulgarian feta cheese crumbled
Place tomatoes, cucumber, peppers, onion & parsley in a large bowl then toss.
Place oil, vinegar, salt & pepper to taste in a screw-top jar.
Cover then shake until well blended.
Toss dressing with vegetables then salad turn into a serving bowl.
Refrigerate until ready to serve.
Top with crumbled cheese & then portion onto chilled plates.
