Austrian Potato Salad

Yield: 4 servings
4 c Potatoes cooked & sliced thin
1 ea Onion minced
2 ea Hard-boiled eggs sliced
1 ts Dry Mustard
1 ea Egg yolk beaten
4 tb Cider vinegar
Salt & pepper totaste
1 tb Butter at room temp
1 ts Hungarian sweet paprika
2 tb Fresh parsley chopped
Mix potatoes, onion & eggs together.
Heat vinegar in a small sauce pan then stir in mustard & egg yolk.
Add salt & pepper to taste.
Pour this mixture into vegetables.
Stir gently to mix.
Add butter & stir again.
Sprinkle with parsley & paprika.
Serve with cold meats.
