On the few days we get to the beach in the summer, we find ourselves going early enough to beat the crowds, and have gotten in the habit of taking breakfast with us, too. Sinc
e I’ve always been dismayed by how much breakfast costs if you decide to eat out or take out, I’ve come up with my own perfect spread to bring to the beach. This requires a little bit of prep work on my part, but I think it’s definitely worth it. After all, anyone can go through the drive thru at a fast food place and order an egg sandwich and a cup of coffee to go. But making your own breakfast and taking it someplace pleasant where you can really enjoy it -- like the ocean or a lake or river, is admirable.
When I’m taking a “picnic†breakfast, I’ve come up with some fairly standard fare but have an occasional splurge or two. Here are some of my breakfasts at the beach:
Blueberry muffins accompanied by a few slices of cantaloupe or even some fresh strawberries.
An egg sandwich with a slice of ham and cheese on a roll, or some decent bread.
A bagel stuffed with smoked salmon, a few capers, some freshly sliced red onion and some cream cheese.
Cheese-themed breakfast spreads – a couple of different kinds of cheeses, some French bread, grapes or some sliced pineapple.
A cornbread sandwich – slices of cornbread with butter, a slice of prosciutto and a drizzle of honey on top.
Hardboiled eggs with some good salami which we eat by slicing off chunks.
Cold roasted chicken (you’ll need extra napkins with this one).
Homemade tacos stuffed with scrambled eggs and pancetta with a generous spritz of sriracha sauce.
Plus cleaning out a kitchen cabinet one day, I found an old thermos that is perfect to carry hot coffee in, so I make a big pot, fill the thermos to the top, and put it in my beach bag. I also pour some milk into a plastic container and put two nice coffee cups in the bag, too.
Oh, and last but not least, I nearly forgot to add one of my favorite “take to the beach†breakfast treats to the list. That would be slices of banana chocolate chip bundt cake that we eat, licking the chocolate from our fingers as the morsels started to melt in the sun.
