This is really good. Looks easy. It is. Very simple and very low in fat and calories.
Bacon Lettuce Tomato Roll
4 whole wheat hot dog buns (split top)
1/4 cup fat free mayonnaise
2 tsp red wine vinegar
4 large romaine lettuce leaves, washed and chopped*
2 medium red heirloom tomatoes, small dice
1 Haas avocado, small dice
1/3 cup crumbled bacon
Salt and pepper
Toast both sides of the buns.
In a large bowl, combine mayonnaise and vinegar with a whisk. Fold in the lettuce, tomatoes, avocado and bacon. Season with salt and pepper to taste.
Divide the mixture into the 4 rolls, and serve immediately.
Risa’s notes:
*original calls for Romaine. I used Red Leaf.
10g fat, 245 calories for one. Save another 57 calories by omitting the avocado (but I wouldn't do it. The avocado is so worth the extra calories and fat as it is creamy and dreamy.)
Yield: 4 sandwiches
