I made these a couple of weeks ago. I don't know if I posted anything about them. They are so good. So easy to make and just delicious. A big hit.
Cheesey Stuffed Burgers
1 tbsp extra virgin olive oil
1/2 cup yellow onion, finely choppd
1 tbsp fresh rosemary, finely chopped
1 lb ground turkey, or ground beef chuck*
1/2 tsp salt
1/4 tsp pepper
1/2 cup cheese of your choice, shredded
4 sprouted grain or whole wheat burger buns
Heat the olive oil in a small skillet over LOW heat. Add the onion and rosemary and cook for about 10 minutes, or until quite soft and sweet. Let the onion mixture cool a bit and then put it in a large mixing bowl with the meat, salt and pepper. Mush the ingredients together. Divide the mixture into 2 patties. Divide each half into quarters. Break those quarters in half too. Form into patties. Place 2 tbsp cheese onto one pattie and sandwich with the other, pinching the edges to seal. Repeat with remaining meat and onion mixture to form 4 burgers.
Preheat grill or broiler (I used a cast iron grill pan).
Cook burgers for 5 minutes on the first side, flip, and cook on the other side for 4 more minutes, or until the burgers are browned and firm. Serve them on grilled Whole Wheat Buns or Sprouted Grain rolls. Favorite fixings!
*original calls for beef chuck, I used some organic ground beef
I served the burgers with the Double Stuffed Potatoes from Y’All Come Eat by The Deen Brothers (Jamie & Bobby). I used mascarpone instead of sour cream.
