Raugintu Kopustai Sriuba - Lithuanian Sauerkraut Soup

Yield: 6 servings
1 1/2 lb smoked ribs or other smoked pork
3 qt water
1 ea onion 1/4'd
1 ea bay leaf
12 ea black peppercorns
2 lb sauerkraut drained & rinsed
1/2 ea cabbage head shredded
Put smoked meat, water, onion, bay leaf & peppercorns into a large oven soup pot or Dutch ove
Bring to a boil while skimming off any foam that rises to surface.
Reduce heat then allow to simmer partially covered for 1 hr.
Remove meat, bay leaves & peppercorns.
Add sauerkraut then bring back to a boil.
Reduce heat then simmer for 30 mins.
Add cabbage then bring back to a boil.
Reduce heat then simmer for 15 mins. until cabbage is tender.
Adjust your seasonings.
Remove fat & bones from meat..
Serve with hot boiled potatoes & rye bread.
