Oladyi - Russian Pancakes

Yield: 4 servings
4 c Kefir or buttermilk
2 c Flour
3 tb Sugar
3 ea Eggs beaten
2 ts Baking soda
1 ts Salt
Butter melted as required.
*NOTE: Oladyi are small & very thick pancakes.
Mix eggs with buttermilk or kefir.
Add baking soda, sugar, salt & flour then mix tcompletely.
Your batter must be dense but liquid.
Strain your batter so that there are no flour lumps.
Melt 2-3 tb butter in your skillet.
Pour 5-6 little rounds of batter ointo skillet.
Cook for 2- 2 1/2 mins per side until light brown.
Remove then serve with butter, jams, sour cream &/or syrups.
