After Halloween I bought a pumpkin at Walmart for 50 cents. It's been sitting on a shelf in my kitchen all these months.
This morning I finally decided that it was time that I did something with it. I removed the seeds and baked them. Yummy! After cutting up and peeling the rest of it, I boiled the pieces until they were very soft, then drained the water and mashed them with a whisk.
I spooned the mashed pulp out in one cup portions, freezing eight portions and keeping out one cup to make pumpkin bread. I'm eating a piece of pumpkin bread now and it's dee-licious. :) The next time I want to make a pumpkin pie or some other dish using pumpkin, all I have to do is pull out the portions and thaw them as needed.
