This is the recipe mom used to make jambalaya. She said she's had it for years.
vegetable oil
1/2 onion, chopped
1/2 green pepper, chopped
2 cloves garlic, minced
1 lb smoked sausage, sliced
1 small (14.5 oz) can diced tomatoes
1-2 T tomato paste
2 t basil
2 t dried parsley
1 t cayenne or to taste
1 bay leaf
salt and pepper to taste
worcestershire sauce to taste
2 cups uncooked white rice
2 cups water
1 can shrimp
Heat a little oil in large deep frying pan over medium heat. Saute onions and green pepper til softened, about 5 minutes. Add garlic and saute another minute or so.
Add sausage and saute just til light golden.
Stir in tomatoes, tomato paste, seasonings, worcestershire, rice and water. Cover and simmer about 15-20 minutes or til rice is tender.
Stir in shrimp and cook another 5 minutes.
