Fried Watermelon Rinds

Yield: 2 Cups
1/3 c Corn meal
1/3 c All-purpose flour
1 ts Salt
Freshly ground black pepper
1 c Shortening or vegetable oil
2 c Watermelon rind cubed 1/2"
Peel rinds with a sharp knife saving only the white inner rind.
Cube inner rind to 1/2".
Mix together corn meal, flour, salt, & pepper.
Heat oil to 350 deg-F in a heavy 10" iron skillet.
Roll cubed rind in corn meal mix & add to hot oil.
Fry about 8-10 mins. until lightly browned.
Stir gently & cook about 4-5 mins. more until browned all over.
Drain on paper towels & season with salt & pepper.
Eat while hot.
