Yellow Squash, Zucchini & Onion Impossible Custard Pie
2 1/2 cups veggies (I used the above mentioned)
1 cup shredded cheese (I used 1/2 cup Swiss only)
1-1/2 cup milk (I used 1 cup whipping cream and 1/2 cup no fat milk)
3/4 cup Bisquick
3 large eggs
Salt & Pepper to taste
Cut the veggies in thin slices and sauté in small amount butter until soft but not limp.
In a blender, mix milk, eggs, flour and seasonings until flour is well incorporated.
Pour all into a buttered high side 2 quart souffle dish (or in a pie dish) and bake at 400 F for 25 to 30 minutes. I had a bit of the liquid that didn't fit in the mold I used but saved it to use for something else today.
BTW, if you add a dollop of sour cream on top of your serving, it takes it beyond delicious!
YIELD: 4-6 side portions
