Sassy never made pork hocks before today. Oh, wow, she did not know what she was missing. Forget pork roast, forget pork chops, forget ham, almost forget bacon ... pork hocks ... the new Schweinefleisch for me! Very easy to make and did I mention that it is delicious? I cooked up some butternut squash and made creamed potatoes to go with my pork hocks today. Next time, I will boil the hocks, and then roast them awhile to crisp the skin, and cook some noodles instead of potatoes.
The tomato and garlic are optional. I used the tomato because it was needing to be used for something soon. The garlic gave the pot of hocks and vegetables a nice flavor. Sassy's Pork Hocks Recipe 4 pork hocks In large skillet, brown pork hocks on both ends. Place hocks in 5 or 6 quart kettle. Top with vegetables and enough water to cover all. Season with salt and pepper. Bring to a boil. Cover and simmer 2 1/2 to 3 hours. Done!

I haven't had them for 20 years or so ... used to make them though. Not very nice to look at, really ... but very tender and tasty meat.
A pork hock is a section of a pig's leg: the leg bone with surrounding flesh and skin. You can also buy smoked pork hocks. I haven't tried those yet.
My dad loves the hock and will get the meat right off the bone.
