Winter Squash Apple & Walnut Soup

Yield: 6 servings
24 oz Winter squash pureed
2 tb Unsalted butter
1 c Unsweetened applesauce
1 c Light cream
1 1/2 c Chicken stock
1/4 c Walnuts toasted then ground
2 ts Dried chervil crumbled
1/2 ts Ground mace
Salt & pepper to taste
1/2 c Toasted walnut pieces
Mix all ingredients except 1/2 cup of walnuts in a large saucepan .
Stir to blend well.
Cook your soup over med-heat for 8-9 mins.
Ladle soup into bowls then garnish with reserved walnut pieces.
