Lobio - Georgian-style Red Beans

1 c red kidney beans
1/4 ts salt
1 ea garlic clove crushed
1/2 ts crushed red pepper
2 ts fresh basil minced
2 ts fresh mint minced
2 tb red wine vinegar
1 ea onion minced
2 ea plum tomatoes peeled seeded & chopped
2 tb cilantro chopped
1 ea clove garlic minced
Salt & pepper to taste
1/2 ts crushed red pepper
1 ts fresh basil minced
1 ts fresh mint minced
3 tb fresh parsley chopped
2 tb red wine vinegar
2 tb olive oil
1/4 lb feta cheese crumbled
Soak your beans in water overnight.
drain then add new ater to just cover beans.
Bring beans to a boil with the next 6 ingredients.
Simmer your beans for 60-70 mins. until tender then drain.
While your beans are still warm you need to stir in all remaining ingredients except feta cheese.
Allow beans to stand at room temp until cool.
Stir in feta cheese.
Refrigerate overnight then heat before serving.
