Kazaki Cyplenok i Griby - Cossack Chicken & Mushrooms

Yield: 4 servings
1 ea Onion chopped
1/3 lb Mushrooms coarse chopped
4 tb Butter
4 ea chicken breasts whole boneless & skinless
1 tb Butter
1 ea Garlic clove minced
Salt & pepper to taste
1/2 ts Nutmeg grated
1/4 lb Swiss cheese grated
6 tb Feta cheese crumbled
3 tb sour cream
Melt 4 tb butter in a skillet.
When foaming add your onion & mushrooms.
Cook for 4-5 mins. until soft then remove heat & set aside.
Slice your chicken roughtly then mix with onion & mushrooms.
Mince this mixture well.
Pre-heat your oven to 375 deg-F.
Add remaining butter to your skillet.
Mix garlic with your onion & chicken mixture then fry for 3-5 mins.
Season to taste with salt & pepper.
Remove from heat then stir in sour cream & nutmeg.
Pour this mixture into a casserole dish.
Sprinkle your cheeses over top.
Bake for 15 mins. until heated through & well browned on top.
Serve hot with potoatoes or rice.
