On our recent trip to Walt Disney World, we spent a couple different evenings in the Downtown Disney area after the parks closed.
While we were there, we went to Once Upon a Toy a couple of times (even though all 5 of us that went are adults!). My mom and I loved this store! My favorite thing about it was the Mr. Potato Head station (or at least that's what I'm calling it).

Basically you pay a flat rate for a box or a (larger) bucket, and then you fill it up with all the Mr. (or Mrs.) Potato Head parts you want!

Plus, they had an unbelievable selection of Potato Head parts -- way more than we had when I was a kid. My mom really liked this too, because it's always been her own tradition to buy all the kids in our family Mr. Potato Heads (me, my brother, my cousins, etc).

They even have tables set up where you can build your own while you're at the store. There was a lot of creativity in there!

Once Upon a Toy also had a Build Your Own Light Saber station. Not QUITE as cool to me as the Mr. Potato Heads, but if I had to choose, I would have gotten a purple one:
