MANY years ago, the first time I'd eaten at an Indian restaurant, I wanted to try curry. I asked how to get curry powder and was actually able to buy some at the restaurant itself.
I've made curry over the years - generally vegetables only - and got into it again recently.
I start the brown rice with sweeteners - cinnamon sticks, cardamom seeds (both are removed before eating) and nuts and raisins. While it's cooking, I cut up various veggies - whatever I have, it varies from day to day - they are then put into a bowl with a small can of low sodium V-8 (I have to thank a friend for this idea) and the curry powder. By this time, the rice is done - it only takes 20 minutes in the microwave - and I put the veggies in for about 7 minutes. They come out still crispy enough.
The combination of flavors is wonderful!!! The curry is very mild and does not get any hotter if I put more in the dish. For a long time afterwards, I keep reminding myself how good it all tasted.

The foods of the indian subcontinent are now almost our national dishes in the UK. The Empire gave us so much!
