We had this for dinner last night and it turned out awesome. And so easy to make too!
vegetable oil
1 1/2 lb pork loin, cut into pieces
1 large can chop suey veggies
1 small can bean sprouts, drained
1 small can water chestnuts, drained
soy sauce to taste
about 4 cups low sodium chicken or beef broth
1/4 cup cold water
1 T cornstarch
Preheat oven to 350°.
Heat a little oil in an ovenproof Dutch oven over medium high heat. Add pork and cook til nice and browned. Add veggies and soy sauce and stir.
Cover and bake for 1 1/2-2 hours or til pork is very tender.
In a small bowl, mix together water and corn starch. Stir into chop suey; simmer over medium heat til thickened.
Serve chop suey over white rice and topped with rice noodles.
