I made this dinner for my mom and I and we both really enjoyed it.
1 lb pasta (I used rigatoni)
1 lb ground sweet Italian sausage
1 6 oz bag spinach
salt and pepper to taste
1 tomato, finely diced
freshly grated Parmesan cheese
Cook pasta according to package directions. Drain; reserve 1/4 cup pasta water.
Meanwhile, brown sausage. Stir in spinach and wilt. Add salt and pepper to taste.
Toss pasta, pasta cooking water and sausage mixture in pasta cooking pot. Toss with tomato and serve immediately.
Serve with Parmesan alongside garlic bread.

And maybe they just didn't add enough sausage spices like fennel.
