Pasta de Peste - Fish Cream

Yield: 1 batch
2 1/2 lb carp or pike or perch boned
1 ea big onion
3 tb corn oil
2 tb butter
1/2 ts ground pepper
1/2 ts nutmeg
1/2 ts juniper berries
salt to taste
Boil fish with some vegetables.
Pick carefully mince fish with 1/2 of onion.
Saute other 1/2 of onion lightly with your juniper berries, pepper, salt & nutmeg.
Mince sauteed onion.
Melt lightly butter & blend it into fish mixture.
Add sauteed minced onion.
Place on a plate & serve as an appetizer.
Garnish with lemon slices.
serve with toast, crackers or crudites.
