What a light and healthy dinner!
This one starred tomatillos fresh from my garden.
olive oil
1/2 small onion, chopped
3 garlic cloves, minced
1 jalapeño, stemmed and chopped
1 t ground cumin
1 lb tomatillos, husked and chopped
handful fresh cilantro, chopped
1 1/2 t sugar or to taste
salt to taste
In a large saucepan, drizzle a little oil. Saute onion, garlic and jalapeño til softened, about 5 minutes. Stir in cumin and cook another 30 seconds or so. Add tomatillos, cilantro, sugar and salt. Bring mixture to a boil; reduce heat to medium low and simmer about 20 minutes or til tomatillos break down, stirring occasionally.
Cool (or chill) completely and serve with grilled salmon.
Variation: Serve with pork or chicken. Puree til smooth.
