My big boys suggested that they make Danish pandekager today, and they were very excited about doing it by themselves. They did get a little help, but with some great team work they managed to create a huge stack of Danish pancakes.
Pandekager was one of the first things I learned to cook, when I was growing up, so I am excited to pass on the tradition.

Christensen is her maiden name, which I legally took in 2001, to reflect my Danish heritage.
Dad was born in Canada, as were my sister and I. With no accent, and not raised with the language, I wanted Mm's maiden name. Leah Mary Allan blended in a bit too much with my surroundings, so i'm now Leah Mary Allan Christensen. I kept Christensen when I married Walker Bennett. Around here, people who know me, call him Mr. Christensen, all the time. lol He loves it! ;)
